They say that scent is our strongest memory sense and whenever I smell these cookies I believe it. They remind me of my childhood, coming home from school to a big warm batch of cookies, lovingly made by my mother and lovingly devoured by all of us.
Its a recipe that my Nana's mother taught her how to make, which she in turn passed onto my family. Everyone in the family loves these cookies and I can hardly blame them. They are crisp on the outside, chewy on the inside with a wonderfully buttery taste.

What you'll need:
3/4 cup Shortening (sometimes use half butter)
1/2 cup White Sugar
1/2 cup Brown Sugar
1 Egg
1 cup White Flour
1/2 tsp Baking Soda
1/2 tsp Salt
1 1/2 cups 5 Minute Oats
1/2 cup White Sugar
1/2 cup Brown Sugar

1 1/2 cups 5 Minute Oats
Depending on what I have available, I sometimes like to use half shortening and half butter.
Cream together the shortening with the sugars.
Add the egg into the mixture.
Mix together all of the dry ingredients.
Add the dry ingredients into the creamed mixture.
Roll the dough into small balls.
Lightly press down with a fork.
Bake for 10 minutes. Sometimes I like to do them less to make them chewier or a little more to make them crispier. I always end up forgetting about one batch in the oven, so there will be an "extra" crispy batch sometimes too ;)
